Country Captain over pasta

  • 1 c seasoning blend (frozen pre-chopped onion, celery, bellpepper blend)
  • 1 T oil
  • 1 lb boneless skinless chicken cut into bite size pieces
  • 1-2 t. curry powder
  • one jar of your fav marinara/spaghetti sauce
  • 1 lb pasta (have fun with the shapes!)
Directions:
  1. Begin boiling water for pasta
  2. In a dutch oven sized pot, warm oil and begin to saute the seasoning blend.
  3. Sprinkle curry over chicken and toss to coat. Curry is NOT HOT, but packed with flavor, use as little or as much as you like.
  4. Season chicken with salt and pepper if you'd like.
  5. Add chicken to vegetable mixture in the pot, sauteing chicken is lightly browned.
  6. Add pasta to water and cook as directed on package, then drain.
  7. Add the sauce to the pot and simmer until chicken is cooked through.
  8. Add pasta to the sauce mixture and toss to coat.
  9. Serve with garlic bread or alone in a bowl :)
