Country Captain over pasta
- 1 c seasoning blend (frozen pre-chopped onion, celery, bellpepper blend)
- 1 T oil
- 1 lb boneless skinless chicken cut into bite size pieces
- 1-2 t. curry powder
- one jar of your fav marinara/spaghetti sauce
- 1 lb pasta (have fun with the shapes!)
Directions:
- Begin boiling water for pasta
- In a dutch oven sized pot, warm oil and begin to saute the seasoning blend.
- Sprinkle curry over chicken and toss to coat. Curry is NOT HOT, but packed with flavor, use as little or as much as you like.
- Season chicken with salt and pepper if you'd like.
- Add chicken to vegetable mixture in the pot, sauteing chicken is lightly browned.
- Add pasta to water and cook as directed on package, then drain.
- Add the sauce to the pot and simmer until chicken is cooked through.
- Add pasta to the sauce mixture and toss to coat.
- Serve with garlic bread or alone in a bowl :)
